All Hail the Kale

Kale is finally getting the recognition it deserves. That’s because this leafy green vegetable is sweet and earthy, very versatile and incredibly nutritious. Winter is peak season for kale; in fact, many people say it actually tastes sweeter and more flavorful after being exposed to a frost. The veggie contains beta-carotene and the antioxidants lutein and zeaxanthin—which are associated with eye health—as well as potassium, vitamins A and C, fiber, iron and calcium. Plus, there are two grams of protein in a serving. Consider using kale as a stand-in for spinach in your favorite dishes, or try kale chips, a crunchy alternative to potato chips. Whole Foods Market offers pre-packaged varieties of kale chips, as well as recipes to make your own.
